Many of these recipes are submitted by fellow food program providers but requirements change from state to state.  If you aren't sure if one of these recipes qualify for your state's CACFP program, check with your food program sponsor!

Celebration Salad

Celebration Salad

16 ounces low-fat cottage cheese
16 ounces fat free non-dairy whipped topping
1 can fruit cocktail in light syrup, drained
1 can crushed pineapple in its own syrup, drained
1 envelope sugar free red gelatin mix such as Jello

Combine all ingredients in a large bowl.  Mix thoroughly and refrigerate for at least one hour. 

Experiment with different flavors of fruit and gelatin.  A teaspoon of flavoring such as almond with peaches and peach gelatin makes this recipe different each time you serve it.  Bananas are not recommended for this salad - they turn black and soggy if not consumed immediately.

Stretch That Dollar

Recipe Name: Stretch that dollar

Ingredients:
Look for supermarkets that have a butcher.
When boneless chicken breasts are on sale, usually 1.99 per pound, I purchase 40 pounds and more, and ask the butcher to grind it for me.
Once it is brought home I separate it and make many 2 pound packages and freeze it.
Same for beef, this ensures that you are getting lean meat at a fraction of the cost. Also turkey, when it is on sale, purchase a big one and remove the breast, and slice into scallopini's and freeze.

Instructions: 
Ground chicken is between 3.99 and 4.99 per pound, and most of it is fat. Ground beef - mostly fat - almost $2 per pound

Special Notes or Tips: 
Investing in a small freezer will pay for itself in no time.
